Finger Millet, commonly known as Ragi and Kezhvaragu (கேழ்வரகு) in Tamil, is a traditional small millet cultivated widely in India. The grains are small and round, with a characteristic reddish-brown to dark-brown appearance depending on the variety. It is used as a staple grain and is commonly processed into flour for traditional South Indian preparations.
Ragi can be prepared in several traditional forms including ragi kali, koozh, porridge, dosa, idli and roti. Ragi flour can also be incorporated into a variety of breakfast and snack preparations. As an agricultural crop, finger millet is cultivated under both rainfed and irrigated conditions, with direct sowing and nursery-raised transplanting being established cultivation methods.
