Green Gram (பாசிப்பயறு) is a small, green-coloured pulse obtained from the mature seeds of Vigna radiata. It is widely used in Indian cooking and is suitable for a variety of traditional preparations. The whole seeds have a firm texture when dry and develop a soft, tender texture after cooking. Different green gram varieties can vary in seed size, colour, duration and other agronomic characteristics.

The whole pulse can be cooked directly or soaked before preparation. Green gram is used in dishes such as sundal, dal, kootu, pongal, soups and curries, and can also be sprouted for culinary use.
