Groundnut Oil, also known as Peanut Oil, is an edible vegetable oil extracted from clean and sound groundnuts (Arachis hypogaea). FSSAI defines groundnut oil as oil expressed from groundnuts and specifies that it should be free from rancidity, suspended matter, separated water, added colouring or flavouring substances and mineral oil.

Groundnut Oil has a characteristic nutty aroma and mild, pleasant flavour, making it suitable for a wide range of Indian cooking applications. Depending on the processing method, it may be available as refined or mechanically/expeller-pressed oil. It is commonly used for frying, sautéing, tempering and preparing traditional dishes.
